PB & J Breakfast Parfaits

These breakfast jars are the perfect way to shake up your weekday mornings - they are the perfect 'grab-n-grow' brekky (healthy and yummy).

All is required is a little prep the night before and you're all set for the perfect start to your day - just imagine waking up to this breakie waiting for you in the fridge! I recommend making a couple of jars at a time then adding the fresh fruit just before you eat. I also love warming this up for a minute or two for those extra cold Melbourne winter mornings.

The protein porridge I use in this is my new favourite - the Botanika Breakky in Vanilla Dream. If you're pressed for time you can you simply skip the parfait and have this on it's own as a full meal. It only takes minutes to make - all you need to do is add boiling water, mix and let it set for 2 mins (so easy!). I'll let the recipe do the rest of the talking so let's dig in...

Ingredients:

- 1 serve vanilla probiotic protein porridge (click here for the Botanika Brekky in Vanilla Dream)

- 1 teaspoon maca powder

- 3 tbsp chia seeds

- boiling water

- half a cup raspberries

- 1 tbsp maple syrup

- 2 tbsp natural peanut butter

- 2 tbsp hemp seeds

- golden kiwi fruit

- half a cup mixed berries

Method:

1. In a bowl cook porridge (60g) in 150ml boiling water, mix and set aside for two minutes. Then add maca powder and mix.

2. In a seperate bowl mix chia seeds in a quarter cup boiling water and set aside for 5 minutes.

3. When the chia is a 'pudding' texture, mash the raspberries and mix them into the chia. Then add the maple syrup, if the mixture is too thick slowly add water and mix until it is a 'jam' consistency.

4. Layer your parfait in a jar - starting with a layer of porridge, then raspberry chia jam, then peanut butter, hemp seeds and fruit. Add a couple of layers of each flavour to get that perfect parfait combo as you dig in.

5. Store in the fridge overnight or for a couple of days and eat cold or warm.
